No-Bake Crispy Chocolate Energy Bites

No-Bake Crispy Chocolate Energy Bites
Makes about 16 (1-inch) balls

2 tablespoons chocolate chips or chunks 
2 large dried Medjool dates, pits removed
1/4 cup nut or seed butter
2 tablespoons honey (or agave syrup)
1/4 teaspoon vanilla extract
1/8 teaspoon fine salt
1 tablespoon flax seed meal
1/3 cup rolled oats
1/3 cup crispy brown rice cereal

1. In the bowl of a food processor, blend the chocolate until finely chopped. Add pit-less dates to the chocolate and grind until finely chopped. Add the nut butter, honey, vanilla and salt and blend until fully combined. It may form into a dough ball. Sprinkle the flax seed meal over the mixture and pulse it several times to combine. Transfer this mixture to a large bowl. 

2. Add the oats and crispy brown rice cereal to the chocolate mixture and knead it all together until fully combined.

3. If you’re not in a rush, chill the mixture in the refrigerator for 15 minutes. If you’re in a rush, skip the chill. Squeeze the chocolate-oat mixture into 1-inch balls, then gently roll them into smoother balls. Place on a plate. Refrigerate, covered, for up to a week; or freeze in a Ziplock bag for up to 3 months and thaw them as needed.
